The beef production system includes all relevant processes up to the farm gate. This includes the fodder production, energy requirement at the farm, livestock production and manure management. Most of the beef consumed is produced in specialized meat cattle systems while only a smaller part is produced in dairy cattle systems. This varies between countries and regions. In the US approximately 78% of all cattle are beef cattle (United States Department of Agriculture (USDA), 2010). Differences in the environmental profile of beef from specialized dairy system versus meat system are assumed to be unsubstantial as most of the environmental impacts are associated with the raising of the cattle. During this phase no milk is produced and therefore no environmental burdens could be attributed to milk versus meat.
The beef production system imputed in this study is a vertically integrated feed lot system, where the breeding herd and stockers are managed extensively (Feed is pasture based with minimal substitution of forages and supplement concentrates during the winter. Manure is voided onto pastures). The stockers are then finished in feedlots where feed rations contain mostly concentrates and manure is managed as solid manure.
Feed required was calculated according to IPCC (2006). The decisive feed quality parameter is the mean feed digestibility. Average mean digestibility of the ratios is different for each stock class, depending on the diet. Milk replacers for sucklers were not considered. Use of straw and straw residues is not considered.
Methane emissions from enteric fermentation were calculated following the IPCC (2006) Tier 2 approach. Enteric fermentation is the digestive process during which carbohydrates are broken down in an anaerobic microbial fermentation by micro-organisms in the rumen of the animals. Emissions from enteric fermentation are dependent on the characteristics of the animal (e.g. milk production, live weight and live weight gain) and the quality and quan-tity of feed consumed.
Herd data is based on USDA (2012), EPA (2012), and IPCC (2006). The breeding herd and calves are fed on a grass based diet. The average breeding cow is replaced every 8 years; the average annual calving rate is 92%; the average calve mortality 10%; the average adult mortality 1%.
Calves are weaned after 270 days with an average weight of 230 kg. From this age, the calves are usually fed on grassland until they weigh approximately 360 kg when they are called stocker calves. Following this period they are placed in a confinement feedlot for approximately 150 days until they reach a live weight of 560 kg. Feedlot cattle are fed predominantly high quality fibrous diets early in their growth periods and high-energy cereal grain diets during the finishing periods. Feed requirements were calculated based on IPCC (2006).
The breeding herd, calves and stockers are managed on pastures, hence all manure was assumed to be deposited directly to pastures. Manure of feedlot cattle is exclusively managed in drylots (US NIR 2012). Manure production rates are modelled following the IPCC (2006) tier 2 approaches.
Background system:
Electricity: Electricity is modelled according to the individual country-specific situations. The country-specific modelling is achieved on multiple levels. Firstly, individual energy carrier specific power plants and plants for renewable energy sources are modelled according to the current national electricity grid mix. Modelling the electricity consumption mix includes transmission / distribution losses and the own use by energy producers (own consumption of power plants and "other" own consumption e.g. due to pumped storage hydro power etc.), as well as imported electricity. Secondly, the national emission and efficiency standards of the power plants are modelled as well as the share of electricity plants and combined heat and power plants (CHP). Thirdly, the country-specific energy carrier supply (share of imports and / or domestic supply) including the country-specific energy carrier properties (e.g. element and energy content) are accounted for. Fourthly, the exploration, mining/production, processing and transport processes of the energy carrier supply chains are modelled according to the specific situation of each electricity producing country. The different production and processing techniques (emissions and efficiencies) in the different energy producing countries are considered, e.g. different crude oil production technologies or different flaring rates at the oil platforms.
Thermal energy, process steam: The thermal energy and process steam supply is modelled according to the individual country-specific situation with regard to emission standards and considered energy carriers. The thermal energy and process steam are produced at heat plants. Efficiencies for thermal energy production are by definition 100% in relation to the corresponding energy carrier input. For process steam the efficiency ranges from 85%, 90% to 95%. The energy carriers used for the generation of thermal energy and process steam are modelled according to the specific import situation (see electricity above).
Transports: All relevant and known transport processes are included. Ocean-going and inland ship transport as well as rail, truck and pipeline transport of bulk commodities are considered.
Energy carriers: The energy carriers are modelled according to the specific supply situation (see electricity above).
Refinery products: Diesel fuel, gasoline, technical gases, fuel oils, lubricants and residues such as bitumen are modelled with a parameterised country-specific refinery model. The refinery model represents the current national standard in refining techniques (e.g. emission level, internal energy consumption, etc.) as well as the individual country-specific product output spectrum, which can be quite different from country to country.
